It's been over two years since I first started seeking the secret to making hand pulled noodles. The recipe for a proper dough has always eluded me, but I think I've finally reached success.
1 1/2 cups All-purpose flour

1 cup very warm water
1/4 tsp salt
1/4 tsp baking soda
sitting for a day + ~15 min kneading in the mixer
